Grilled food is enhanced with marinades and sauces. Marinades tenderize and flavor inexpensive cuts of meats thereby stretching your budget. It works by penetrating meat fibers thus it always contains an acid or alcohol base such as wine, beer, vinegar or fruit juice. You should look for flavor balance in marinade. Cooked marinades are best chilled before adding to the meat. Use enough marinade to immerse the meat halfway, after which, the dish is covered.
