To accomplish food smoking, fill the pan or the smoker attachment with hot tap water. Place pre-soaked wood chunks or chips and twigs in the other compartment or in a foil pan directly on the Flavorizer bars over the lit burner. Begin cooking after preheating and when grill is fully smoking.

The smoker should always be placed on a level, heatproof surface that is of considerable distance from buildings and traffic. Since smoke aromas tend to linger for hours, a place away from the house is recommended. There are several tips to remember especially for beginners.

It is best to use a meat thermometer to determine whether smoked-cooked foods are done. Food cooked in this manner look different as they may appear pink or red even if completely cooked because of the use of apple wood. You can experiment with different woods and meats but always start with a small amount of wood, gradually adding as desired. Combining woods can produce unique food flavors.
